The grapes are transported in a refrigerated truck, then crushed and cold soaked for up to 4 days. Fermentation starts slow because of the cool nights in Truckee and then ends strong about 4 weeks later. Our barrel aging cellars are a cool 50-55 F. We age in 60% new French oak for a minimum of 18 months. All this produces a very delicate Pinot with the complexity, depth, and soft tannins that the Pisoni clone is known for. $42.00
